La Pergola Roof-Garden Restaurant in Rome Cavalieri Hilton | Category: Gourmet Dining | 2008-03-15 |
| | | | In Rome Cavalieri Hilton, the award-winning rooftop garden restaurant La Pergola offers an extraordinary dining experience. It boasts an unparalleled panorama over the Eternal City with St. Peter's dome prominently in view. La Pergola, named “best restaurant in Rome,” had been receiving two Michelin stars for many years, then until year 2006 it became a three-Michelin-star restaurant. The cherrywood walls and frescoed ceiling provide the perfect backdrop to the Mediterranean fare. The restaurant also boasts 48,000 bottles in its award-winning wine cellar. | | | Heinz Beck, appointed Executive Chef in 1994 at the Rome Cavalieri Hilton’s restaurant, La Pergola, is the culinary genius of the best restaurant in Rome and one of the best in Italy. Commenting on the cuisine at La Pergola, Chef Beck notes ..... | | | Our cuisine is light with Mediterranean flavors and constantly evolving. There is always new excitement - after all, food and wine make up the most important part of the travel experience! My intention is not so much that of satisfying your appetite as of transmitting emotions through harmoniously balanced aromas, flavors and colors - sensory stimuli which are intertwined and blended in suffused and refined surroundings. I am always searching for new combinations of flavors and textures, new solutions and surprises which respect both the local cuisine and Italy's cultural heritage. My own enthusiasm and passion are enriched when I am exploring innovative cooking techniques or using the avante-garde equipment which permits me to maintain the intrinsic values of many foods. All of this and more, however, are projected towards a single goal: maintaining the high quality of your emotions and your hedonistic pleasure at table. | | | La Pergola Menu from Year 2003 | | | At the time, the Seven-Course Menu was €130.00 per person and the Five-Course Menu was €115.00 per person. Currently, La Pergola offers the Nine-Course Menu and the Six-Course Menu. | | | For us, the whole experience with La Pergola was incredible,!! The ambiance, the view, the service and the food, everything was so perfect. What a service! All the servers were very well trained and we were so impressed by their down-to-the detail service. Just a thought of needing more bread crossing the mind, at that moment, a server appeared next to us from nowhere with a basket of breads. They would come to refill the water glass before we realized that we needed more water. They were so good to the point that we thought they could read our mind and they could predict what we needed next. | | | Also, the way they served food and cleared away the plates, they were so gentle. This is really truly 5-star service. Up until today, when we go to so-called 5-star restaurants, we always like to compare their service to La Pergola’s. The food …. What can I say….. By using the freshest and high quality in-season ingredients, Chef Beck created the most innovated and delicious dishes that made us wow! After eating at the La Pergola, we really truly believed that Chef Beck and his team have reached their goal: ……. maintaining the high quality of your emotions and your hedonistic pleasure at table. La Pergola is truly a three-Michelin-star restaurant! P.S. We're too busy enjoying the view, the food and the service, we forgot to take pictures...... | | | La Pergola is opened for : Dinner Attire: Formal Hours: Tuesday - Saturday 7:30 pm - 11:30 pm | | |
